“Gemyse – havens grønt året rundt” is a 240-page cookbook packed with beautiful images and 70 delectable recipes from Nimb’s leafy haven, Gemyse. The restaurant is a small, quiet oasis in the heart of the funfair world of Tivoli Gardens. The recipes are from the hand of gastronomic chef Mette Dahlgaard, whose heart is especially devoted to the diversity of vegetables.
Where reason meets emotion
Mette describes Gemyse as the place where reason meets emotion. Her mission is to let the produce speak for itself and to serve it as naturally as possible – with an organic focus and an eye for the changing seasons and for variations in taste and texture.
The cookbook follows flora and fauna over the course of the year. Although the book focuses on the greens, the recipes also include seafood and meat. There is also a chapter on desserts.
“Good food requires a desire, a little time and curiosity. Connect with your inner child. Allow yourself to cheat and take short cuts. But respect the produce for what it is and make a good impression all along,” is Mette’s best advice before you embark on her recipes.
